Recipe –

• 1 part ground up lamb Jerky
• 1 part dried blueberries
• 1 part raisins
• Tablespoon ground Dried apple
• Pinch dried mint
• 2 tablespoon melted lard or more if needed
• Sugar

Pemmican is the original energy snack as used by the greatest explorers in history.

It’s made of dried meat, dried fruit and lard and truly is the best food I’ve tried for outdoor swimming in freezing cold waters!

We’ve found Pemmican works best with homemade lamb jerky. Lamb Jerky is really easy to make! Just put thinly (2-3mm) sliced and seasoned strips of lamb on the oven shelves for 12 hours at 75c keeping an eye on the lamb throughout drying period and turning if necessary.

Here are the main Pemmican ingredients below…

Homemade raisins

Homemade Lamb Jerky…

Home dried blueberries…

Dried Apple…

 Dried mint mint leaves…

We like using homemade ingredients but shop bought will do be just as good if you don’t have time  to make jerky or dry your own fruit.

Method

Simply grind up all the ingredients in a blender individually.

Add them all to a large mixing bowl sprinkle with sugar and mix thoroughly.

Once mixed up you can add and mix in your melted lard to bind it all together. Then press into a bar on grease proof paper and put into freezer for 30 minutes to set hard.

Here’s the finished energy bar pressed together. It’s best left in the fridge overnight to bind and allow the flavours to mingle and mix.

Once your Pemmican is set nicely together it will last almost indefinitely and is perfect in bite size booster chunks!
